Title: Black Bean & Mashed Potato Patties

Yield: 6 Burgers
15 oz Can diced white potatoes;
- drained
15 1/2 oz Can black beans; drained
1 tb Dried minced onion -OR-
1/4 c Onion; minced; sauteed
1 ts Dried parsley -OR-
2 tb Fresh parsley; minced
3/4 c Dried bread crumbs -OR-
1/2 c Quick oatmeal
Salt & pepper; to taste
1 tb Olive oil
Total time: 20 minutes
In a large bowl, mash the potatoes and beans with a potato masher
until well mashed.
Add the onion, parsley, bread crumbs or oatmeal, and salt & pepper to
taste. Mix well until combined.
Divide the mixture into 6 (or 12) equal portions and use your hands to
shape into patties.
Heat the oil in a large skillet over medium heat.
Cook the patties until golden brown on both sides, about 5 minutes per
side.
Drain on paper towels and serve hot with your favorite sauce.
Per 249 g serving: 293 cal, 53 g carbs, 4 g fat, 218 mg sodium, 12 g
fiber, 12 g protein; low Cholesterol
