Cherry Orange Chicken

4 lb Chicken fryers --
- up to 6 lb, cut up
4 tb Butter -- melted
1 c Brown sugar
1/2 ts Orange zest -- grated
1/4 ts Ground ginger
1/2 c Orange juice
1 lb Can dark sweet cherries --
- drained
This is a simple and easy way to prepare chicken, one of the
cheapest meats in the U.S.
Place the cut up chicken in a large baking pan. Pour the melted
butter over the chicken. Combine the brown sugar, orange peel,
ginger, and orange juice, blending well, and pour over the chicken.
Bake in a preheated 350?F oven for 45 minutes. Remove and add the
cherries, then return to the oven and bake for 30 minutes more, or
until the chicken is golden brown and tender.
Yield: 8 Servings
