Title: Millet Chickpea Patties

Yield: 8 Patties
1 1/2 c Cooked chickpeas
- (15 oz can);
- drained, reserve liquid
1 c Cooked millet
1/2 c Cilantro, parsley, or basil
1 1/2 tb Cooking oil
2 cl Garlic; minced
1/4 c Onion; minced -OR-
1 Celery rib; finely diced
2 ts Ground coriander
1 ts Ground cumin
1/4 ts Turmeric powder
1/4 ts Paprika
1 pn Cayenne; or to taste
3 tb Chickpea flour;
- substitute wheat flour
- if you prefer
1/2 c Water, stock, or
- chickpea cooking liquid
1 tb Braggs liquid aminos or
- soy sauce
2 tb Tahini
1/4 ts Salt; or to taste
Black pepper; to taste

1/4 c Carrot (1 sm); shredded
1/4 c Toasted sunflower seeds
Total time: 30 minutes
Process the chickpeas, millet, and fresh herb in a food processor
until crumbly OR mash the chickpeas by hand, mince the herb, then
combine with the cooked millet in a large bowl.
Heat the oil on medium low in a saute pan.
Add raw minced onion or celery and saute until softened.
Add minced garlic and saute 1 minute.
Add spices and saute 1 minute. Add onion & garlic powders at this
point if you are substituting them.
Add chickpea flour, stir and cook 5 minutes
Add water or other liquid and stir with a whisk until the mixture
forms a thick paste.
Stir in Braggs or soy sauce and tahini.
Add the paste to a bowl with the millet and chickpea mixture and
grated carrots.
Mix well, using your hands to form the mixture into a dough.
Heat a frying pan on medium.
Form the millet chickpea dough into 12 patties or 16 falafels or 8
veggie burgers.
Add oil to the pan and fry on both sides until golden, about 5
minutes each side.
