Title: Orange Banana Date Nut Cream
Categories: Desserts, Puddings
Yield: 4 Servings
4 Frozen bananas; sliced
1 lg Medjool date;
- pitted & soaked
2 tb Cashews (30 ml);
- finely chopped
1 tb Orange zest (15 ml)
1 tb Fresh orange juice (15 ml)
1 tb Coconut nectar (15 ml)
- (optional)
1/2 ts Vanilla extract (2 ml)
1 Vanilla bean;
- scraped seeds of
1 pn Sea salt
2 tb Cashews (30 ml); chopped
In a food processor, combine all the ingredients except the chopped
cashews. Process until smooth. Stir in the chopped cashews. Serve
immediately or freeze in an airtight container.
Tips:
If like me, you have an ancient, low power food processor, you can
make this recipe in an ordinary blender. I had to add more orange
juice to make it work, and that was fine.
Since I wasn't sure if my blender would puree chopped cashews, I
soaked them first. You could also grind dry cashews to powder in a
spice grinder.
I used agave syrup instead of coconut nectar, adding an extra 1 tb. I
also added another date. I skipped the vanilla bean and added extra
vanilla instead. I also used toasted salted chopped cashews and
sprinkled them on top with a bit of extra orange zest.
